  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, mix together the softened butter, whole grain mustard, dijon mustard, honey, garlic powder, onion powder, paprika, salt, and black pepper.
  3. Rinse and pat dry the turkey, then place it in a roasting pan.
  4. Using your hands, carefully loosen the skin on the turkey breast and spread the mustard butter mixture evenly under the skin.
  5. Squeeze the lemon and orange halves over the turkey, then place them in the cavity along with the onion and smashed garlic cloves.
  6. Cover the turkey with foil and roast in the preheated oven for 2 hours.
  7. Remove the foil and continue to roast for an additional 1 hour, or until the internal temperature of the turkey reaches 165°F (74°C) in the thickest part of the thigh.
  8. Once done, remove the turkey from the oven and let it rest for 20 minutes before carving. This will allow the juices to redistribute and keep the meat moist.
  9. While the turkey is resting, prepare the gravy by pouring the pan drippings into a measuring cup. Skim off any excess fat and add enough chicken broth to make 2 cups of liquid.
  10. In a saucepan, melt 2 tablespoons of butter over medium heat, then whisk in 2 tablespoons of flour. Cook for 1 minute, then slowly pour in the pan drippings and broth, whisking constantly. Cook until the gravy thickens, then add the whole grain mustard and dijon mustard. Season with salt and pepper, to taste.
