Traditional Chinese New Year Dumplings

Instructions:

  1. In a large bowl, mix together the ground pork, Napa cabbage, ginger, garlic, soy sauce, sesame oil, rice vinegar, sugar, and white pepper until well combined.
  2. In a small bowl, mix together the water and cornstarch to create a slurry.
  3. Take a dumpling wrapper and place a small spoonful of the pork mixture in the center. Dip your finger in the cornstarch slurry and run it along the edges of the wrapper. Fold the wrapper in half and seal the edges by pressing firmly. Repeat with the remaining wrappers and filling.
  4. In a large non-stick pan, heat a thin layer of vegetable oil over medium heat. Place the dumplings in the pan and cook for 2-3 minutes until the bottoms are golden brown.
  5. Once the bottoms are browned, pour in enough water to cover the bottom of the pan. Cover the pan and let the dumplings steam for 5-6 minutes.
  6. Remove the lid and let the water evaporate. Once the bottoms are crispy again, remove the dumplings from the pan and place them on a serving plate.
  7. In a separate pan, heat a small amount of vegetable oil over medium-high heat. Pour in the beaten egg and swirl the pan to create a thin omelette. Cook for 1-2 minutes until the egg is set. Remove from the pan and slice into thin strips.
  8. Place the egg strips on top of the dumplings and serve hot with your favorite dipping sauce.
